With an indefinite shelf life because of its high concentration of sugar, honey should be kept cool and dry, away from direct sunlight in a tightly covered container so it doesn’t absorb moisture from the air. Tupelo Honey...An Epicurean Treat!

White tupelo honey is sometimes called fine tupelo honey and is the most expensive honey because it is the most expensive to produce. Care must be taken by the beekeepers to clean the combs at the right time so that when the white tupelo gum tree blossoms, only the honey from these blossoms is collected. White tupelo honey is a prized, sweet and delicious light amber table honey with a greenish hue to it and it won't granulate or crystallize.

Black tupelo honey is made from the blossoms of the black tupelo gum tree, nyssa sylvatica, and it produces a darker honey that will granulate. Black tupelo is not prized for table honey and is often used as a bakery grade honey. Both white and black types of tupelo honey are produced by placing bees on platforms on the tupelo gum trees in the spring months. As the bees travel through the swamps they produce the honey from the gum trees' nectar.

If top quality white tupelo honey is mixed with any other type of honey such as black tupelo, wildflower or gallberry, it will granulate. Only fine white tupelo honey won't granulate or crystallize. The delightful taste of pure white tupelo honey can be savored on hot buttered toast or cold vanilla ice cream as well as on or in many other foods.

Tupelo honey was mentioned in the 1997 movie, Ulee's Gold, that stars Peter Fonda as a beekeeper who also battles bank robbers and looks after his abandoned grandchildren. Many aspects of tupelo honey production and beekeeping were taught to Fonda by the Lanier family of Wewahitchka, Florida. L.L. Lanier and Sons produces fine tupelo honey and some family members were extras in the movie. Tupelo Honey is also the name of Irish singer Van Morrison's song and album released in November of 1971. Fewer beekeepers are reporting evidence of a mysterious ailment that had been decimating the U.S. honeybee population.

But losses due to colony collapse disorder remain high enough to keep beekeepers on edge, and longtime stresses on bees such as starvation and poor weather add to the burden.

For the second year, Haagen-Dazs ice cream is investing in research and leading a “Haagen-Dazs loves Honey Bees” campaign.

“More than half of the flavors in the Haagen-Dazs ice cream line require ingredients pollinated by honey bees,” says Ching-Yee Hu, Haagen-Dazs brand manager. So, they want to make sure honey bees are plentiful. “Anyone who cares about eating all-natural foods should care about the honey bees,” she says.

Coffee is a good beverage choice

Coffee once deemed harmful to health is turning out to be in many ways a beneficial one. It could protect against diabetes, heart disease and stroke, liver cancer, cirrhosis and Parkinson's disease and increase athletic performance. Lots of new research, and the recognition that older, negative studies often failed to tease apart the effects of coffee and those of smoking because so many coffee drinkers were also smokers. "Coffee is a complex beverage with hundreds, if not thousands, of bioactive ingredients, a cup of coffee is 2% caffeine, 98% other stuff."

Africanized honey bees move north

They used to be called killer bees, after a cross-breeding experiment went awry between European and African bees in Brazil, back in 1957. The bees have been cross-breeding and became tamer as they moved north, reaching Texas in 1990, and Utah this past February. Africanized honey bees are no friend to local bee keepers. They don't make much honey and they are aggressive. A hive of Africanized honey bees has been discovered in Cedar City. The bees survived the winter indoors, in the eaves of a house but are running out of tricks in their attempt to make the trip north.

Green tea extract reported to show promise against leukemia

Scientists are reporting positive results in early leukemia clinical trials using the chemical epigallocatechin gallate, a subtance in green tea. The findings appeared in the Journal of Clinical Oncology. Green tea is made with the leaves of Camellia Sinesis, a shrub native to Asia. After the research showed dramatic effectiveness in killing leukemia cells, the findings were applied to studies on animal tissues and then on human cells in the lab. The research has moved to the second phase of clinical testing in a follow-up trial, already fully enrolled, involving roughly the same number of patients. All will receive the highest dose administered from the previous trial.
